Chicken Cacciatore
- 3 chicken breast halves
- 1 small onion chopped
- One Bell Pepper Large chop
- 1 Tablespoon Tomato paste
- 1 Large can chopped tomatos
- 1/4 Cup Beef Broth
- 1 Teaspoon rosemary
- 1 Teaspoon Thyme
Cook onion and chicken breast in pan sprayed with Olive oil until browned. Add the rest of the ingredients. Lower the heat and simmer for 1/2 or 45 minutes.
Measure the dry Whole Wheat Pasta for each serving before cooking it. 1/4 cup dry =1/2 cup cooked.
Greek Green Beans:
- Fresh or canned green beans no salt or sugar added.
- 1 Tablespoon olive oil
- 1 Tablespoon Tomato sauce or paste
- Salt.
These are also served without the tomato.
To make the Chicken Cacciatore Greek add 2 Cinnamon sticks, my favorite.
Serving size:
- 1/2 of chicken breast, 4 oz's.
- 1/2 Cup Cacciatore Sauce
- 1/2 Cup Macaroni
- 1 Cup Green Beans
Add 2 or 3 Tablespoons chopped Parsley, loaded with Vitamin K
