Minestrone
I hit another goal one day early, 20 pounds gone.
I made thick Minestrone soup yesterday. I added some Turkey meatballs for added protein along with the beans. It was delicious. I didn’t miss the salt that I have always had to have on beans and pasta. I roasted a tomato for more flavor. The soup have very few ingredients but full of flavor. It made about 4 cups; I had one cup plus 3 meat balls.
Recipe:
1 cup great northern beans
¾ cup raw macaroni (cooked)
1 small can tomato puree
1 tomato roasted
1/2 cup frozen spinach
1 cup organic chicken broth
1 tbs. dried thyme
½ cup celery
Add water if soup is to thick
Meatballs
1 pound ground turkey
½ copped fine onion
2 tbs. seasoned bread crumbs.
1tsp. olive oil
Make about 20 meatballs (small)
Pan Fry meatballs in oil sprayed nonstick pan.
I used organic canola spray.
Cook meatballs and add to soup, cook a few minutes, tasty.
A serving is 1 cup. 250 calories
I lost 13.4 pounds in one month. Hope to do the same or better in November. That would make me 195, only 5 to join the gym. I might be joining in December instead of January. Wouldn’t that be nice.
I didn’t take any Trimspa yesterday. I did take 2 Hoodia but don’t think I needed it. I was not hungry all day. Best thing, I haven’t had any food cravings, not even for wine. Sure hope this lasts, but if I get hungry, I always have the Trimspa, it takes about ½ hour to make me feel full. Love that!
